One Bowl Chocolate Pumpkin Muffins (Vegan and Gluten Free)

There are a number of countries that celebrate Thanksgiving and although the dates, culinary offerings, and nature of the celebrations vary from country to country, the purpose of the festivities is to express gratitude, often for the fall harvest, and generally includes a feast to be shared with the community.

Around Thanksgiving, pumpkins are a popular ingredient in many dishes. For a pumpkin dish this year, I decided to made a quick and easy recipe for chocolate pumpkin muffins. The muffins are vegan, gluten free and, as the name suggests, can literally be made in one bowl!

Cranberry and Almond Vegan Breakfast Bars

Mid-September marks the start of the cranberry season in British Columbia. Cranberries have long been part of the history of British Columbia and have always been used in a variety of ways. One recipe I recently came across is Cranberry and Almond Vegan Breakfast Bars which make a great healthy and nutritious snack, picnic or “on-the-go” breakfast food.

Vegan Fig Rolls as Healthy Snacks or “Fuel Food”

I have always considered Fig Rolls (UK) and Fig Newtons (North America) as a relatively healthy choice in the world of commercial cookies and biscuits. Chocolate Chargers Energy Bars

When time permits, try a healthy, plant-based alternative called Chocolate Chargers Energy Bars to serve as a snack, fuel sports, or simply sustain those intense moments!

Chocolate Cranberry Muffins

Coming across a favourite old recipe for Chocolate Cranberry Muffins from many years ago and adapting it to suit my eating preferences today was an interesting exercise. However it showed me once again how easy it is to recreate most recipes to a plant-based friendly alternative.

Dessert with Benefits: Chocolate Avocado Mousse

A dessert with nutritional benefits may seem too good to be true! However, there is no catch and just by including fruits and vegetables in desserts and selecting choice sweetening agents, this can be a reality. Chocolate (Cacao) Avocado Mousse is a creamy, rich mousse made with avocado and is […]

Healthy Chewy No-Bake Granola Bars

The versatility of a recipe is a high priority for me when cooking or baking and I tend to gravitate towards dishes that can withstand a degree of creativity and tolerate substitutions to whatever might be at hand. These chewy granola bars fit this bill. I have always preferred chewy […]
