Raw Sweet Potato Salad with Curry Almond Sauce

When it comes to eating vegetables, I am not a big fan of crunching them uncooked and generally prefer roasted, stir fried or even boiled.

Despite this, I did enjoy this raw sweet potato salad with a curry almond sauce! I had prepared a similar dish many months ago in which the sweet potato spirals were stir fried for about 5 minutes before adding them to the salad which softened them slightly. However, this recipe is authentically raw! As it involves no cooking, it is great for a summer meal when you don’t want to turn the stove on or, alternatively, it can be served as a light side dish to add a fresh flavour and crunch to a warm, winter meal.

Apple and Blackberry Crumble (Vegan and Gluten Free)

One of my favourite desserts from childhood is the classic crumble with either an apple and blackberry or rhubarb base. As my cooking now involves quite a different array of ingredients than it did at one time, it is always a bonus when one of the classics can be adapted to a vegan and gluten free version. I have tried a number of variations and this Apple and Blackberry Crumble recipe seems to most closely resemble the original texture.

Double Blueberry, Lemon and Almond Granola

There is nothing quite like the sweet taste of a fresh, ripe blueberry. These small, plump berries with their deep, rich color are amazingly versatile and their fresh, fruity flavour can serve to enhance many foods as well as being a delicious addition to a variety of dishes including pancakes, pies, tarts, muffins, sauces and cakes.

This double blueberry, lemon and almond granola is vegan and gluten free and full of wholesome ingredients and by making your own, you can control the amount of sugars, fats and overall ingredients to suit your preferences.

Matcha Chocolate Avocado Emoji-Buns

It is interesting what a difference a smile makes, and it is so true that like attracts like and a smile begets a smile.

Despite the name, these Matcha Chocolate Avocado Emoji-Buns have no avocado in them. They are basically a sweet bread shaped like an avocado with matcha in the main dough to give a green avocado colour and cacao powder in the portion which represents the avocado stone. Once they are baked, the Emoji expressions are painted on with an edible marker. Their faces are simply to make you smile!

There are a number of countries that celebrate Thanksgiving and although the dates, culinary offerings, and nature of the celebrations vary from country to country, the purpose of the festivities is to express gratitude, often for the fall harvest, and generally includes a feast to be shared with the community.

Around Thanksgiving, pumpkins are a popular ingredient in many dishes. For a pumpkin dish this year, I decided to made a quick and easy recipe for chocolate pumpkin muffins. The muffins are vegan, gluten free and, as the name suggests, can literally be made in one bowl!

Farro, Kale and Roasted Sweet Potato Salad with Lemon Tahini Dressing

As we move towards the holiday season, it can be challenging trying to cook for a “mixed-eater household” or, if you are a vegetarian/vegan, visiting where “traditional” holiday meals are being served. In a household with a mix of meat eaters, vegetarians and vegans, the Farro, Kale and Roasted Sweet PotatoSalad can make either a hearty lunch or a tasty and satisfying side dish that everyone can enjoy.

This recipe can be made ahead of time and the chewy, nutty flavour of farro, tart cranberries, chilli roasted sweet potatoes and chickpeas all topped with a tangy lemon tahini dressing makes for such an interesting combination of textures and flavours. Last but not least, the lovely colours of the ingredients will make it a feast for the eyes on any holiday table!

Vegan Fig Rolls as Healthy Snacks or “Fuel Food”

I have always considered Fig Rolls (UK) and Fig Newtons (North America) as a relatively healthy choice in the world of commercial cookies and biscuits. As easily digestible carbohydrates, they have also been a tasty favourite as “fuel food” for sports. However, they still fall into the category of processed food and so I was pleased to come across a naturally sweetened, gluten free, no-bake alternative to these popular commercial treats.
